Live local, Love local, and how to make it

Tomorrow morning, I'll be on CBC Radio's Weekend Morning Show, with guest host, Marjorie Dowhos, to talk about our wonderful local products.

I'll be preparing a Mango Martini, with Get Cheeky Foods Mango chutney and Patent 5 Elettaria Gin, and two pizzas, with Old Church Bakery pizza dough.  The first is a Turkish pizza with blue cheese, Nature's Farm egg, and Fertile Farm microgreens.  The second pizza is with a Zinn Farm Berkshire Pork Tenderloin that I have marinated and BBQ'd, with hoisin and greens.

The farmers and producers that are vendors at St. Norberts Farmers Market come from over 30 communities across the province.  A couple of producers drive in over 3 1/2 hours for market day.  The economic and cultural reach of one market is more that just around the city of Winnipeg.

We are all lining up to go into stores.  This quick line up with vendors outside and under the canopy, is one line up for over 60 stores.

Enjoy the recipes and thank you for supporting local.

Mango Martini

Juice of one orange (I used a blood orange)

1 -2 oz Patent 5 Elettaria Gin (or Patent 5 Vodka)

1/2 oz Disorrono

1-2 tsp Get Cheeky Mango Chutney

Zest of orange

Shake in martini shaker over ice, serve straight in a martini glass or with cold tonic water as a highball.

Koniya Turkish Pizza

Such a lovely and simple pizza to prepare.  It is simply blue cheese mixed with fresh herbs and an egg.  Here, I used a Nature's Farm egg, mixed with Buttermilk Blue Cheese, from DeLuca's, and herbs and microgreens from Fertile Farm.  The base is wonderful pizza dough, from Old Church Bakery.

Berkshire Pork Tenderloin on fluffy flatbread

I used the same pizza dough, from Old Church Bakery, but I marinated Berkshire Pork Tenderloin from Zinn Farm, and grilled it with the 7-6-5 method.  I served it on the pizza, with a little hoisin sauce and greens.

Marinade for Pork Tenderloin or Pork Belly

1 tablespoon oil
5 slices ginger
2 scallions (cut into 3-inch pieces)
3 star anise
1 cup shaoxing wine
1 cup light soy sauce
¾ cup dark soy sauce
½ cup sugar
1 teaspoon salt
5 cups water

Let the Pork Tenderloin marinate for several hours or overnight.

On a hot BBQ, Place tenderloin and cook on medium heat for 7 minutes with the lid closed.  Turn, and cook for 6 minutes with the lid closed.  Turn the heat off and leave to rest, with the lid closed for 5 minutes.  Remove from heat, let rest, and slice.  Marinating liquid can be cooked and thickened with a little corn starch and used as a sauce.

Enjoy!

Butternut Squash Soufflé

Please note:   Soufflés are not as difficult or fussy as the movies depict.  In fact, you can prepare the mixture in advance for hours, prior to putting into the baking dish and baking.  It is a delicate product, but not scary.  I used amazing local products, such as, organic butternut squash, grown by Kelly Ditz, wonderful and consistent eggs, by Nature's Farm, Prairie Mills Flour, and Notre Dame butter.

Butternut Squash Soufflé

Preheat oven to 425º F

Part 1:
Make a Béchamel Sauce by combining the following with a small whisk over a double boiler or Bain Marie;

3 tbs. Butter
1/2 cup flour
Add a scant cup cold milk (3/4 cup)
and continue to whisk over the steam heat until thickened.
Season with salt, pepper and nutmeg.

Part 2:

Sauté 1 chopped onion,
1 half roasted butternut squash
1/4 cup toasted almonds

Blend squash mixture to a smooth paste and set aside.

Part 3:

Add squash mixture to bechamel and whisk in. Then add 4 – 5 egg yolks from large eggs.
Fold in 4-5 egg whites, whisked to stiff peaks.

Use a buttered and floured soufflé mold or 6 smaller ramekins. Pour in the mixture and bake in the oven at 400ºF for 30 minutes (less time if using ramekins) without opening the door during cooking, until well-risen and a deep golden-brown on top.

Serve immediately. Enjoy with a light salad with a vinaigrette. Try with a chocolate fondue for dessert.

Enjoy!

Father's Day made easy and delicious for CBC's Weekend Morning Show

Today on CBC's Weekend Morning Show with host Nadia Kidwai, I presented the following dishes to make Father's Day easy and delicious.  Many of the ingredients are found at the St. Norbert's Farmer's Market.  Steak and Eggs with grilled asparagus.

Steak and Eggs

1 ribeye steak per person  (wonderful ribeye steak from Wildfire Farms, and available at St. Norbert's Farmer's Market)
Dijon Mustard
Birch Syrup (very versatile Birch Syrup is available at St. Norbert's Farmer's Market from The Canadian Birch Company)
salt and pepper, to taste
olive oil, drizzles
1 egg per steak (Nature's Farm carries the most wonderful golden yolk eggs!  Available at St. Norbert's Farmer's Market)

Mix enough Dijon mustard and Birch Syrup to cover both sides of each steak.  Cover the steaks and let sit at room temperature until ready to grill, cool in the fridge if a longer period of time.

Heat the grill to medium high heat.  Drizzle olive oil over the steaks and place on a hot grill.  Let cook for 2 minutes before turning, not flipping, so as to create grill marks.  Let cook for two minutes more and flip.  Repeat cooking for two minutes, turn for grill marks, and let cook for another two minutes.  Remove from grill and let rest for about 5 minutes.  Season while resting as the meat will be open to absorbing more flavours.

Serve with a soft cooked egg, over-easy or sunny-side up on top of the steak.  The yolk creates a creamy sauce-like texture over the steak.  Or, if you prefer, place the soft egg over the grilled asparagus.

Grilled Asparagus

1 bunch asparagus, bottoms trimmed  (I used Fertile Farm asparagus, available at St. Norbert's Farmer's Market)
drizzle good sesame oil
lemon zest
seasoned sesame seeds
salt and pepper, to taste

After flipping the steaks, add the asparagus that has a good drizzle of sesame oil on it.  Let cook for two minutes and flip.  Remove from the heat and add lemon zest, and seasoned sesame seeds.

Enjoy!

Fennel Seared Scallops on Creamy Fennel and Rosemary Pasta on CBC

This morning on CBC's Weekend Morning Show with guest host Laurie Hoogstraten, I presented the following dish using Nature's Farm pasta, Scallops from Gimli Fish, butter from Notre Dame Dairies, and love.

Fennel Seared Scallops on Creamy fennel and rosemary pasta
2 scallops per person (large dry scallops are available at Gimli Fish)*
ground fennel
butter
drizzle olive oil
salt and pepper

1 pkg Rosemary and fennel pasta (from Nature's Farm and available at St. Norbert's Farmer's Market)
1-2 shallots, sliced
1 tbs butter (Notre Dame Butter)
drizzle olive oil
1/2 - 1 cup cream, depending on amounts
1/2 cup (+) white wine
splash Pernod or Ouzo
salt and pepper, to tastes

Prepare sauce by sautéing shallots in butter and olive oil.  When soft, add the cream, wine, Pernod and season, to tastes.

To sear scallops:  dry scallops off on a paper towel and dip in seasoned ground fennel.  Bring a pan to medium-high heat with butter and olive oil, to prevent burning.  Brown (sear) scallops on both sides when ready to serve immediately.

When ready to serve, prepare pasta and toss with sauce.  Top with seared scallops.

*Dry scallops are an excellent quality scallop as they have not been injected with a type of saline preservative.  Dry are preferable as they can brown, whereas the wet scallops won't.

Enjoy!

Turkish Sticky Figgy Pudding, aka Fig Meshnun, on CBC's Weekend Morning Show

Tomorrow, on CBC's Weekend Morning Show, with host Nadia Kidwai, I will be presenting the following dessert.  This was a huge hit at my former restaurant and I made this by popular demand today.  The cakes/puddings, can be prepared in advance, as can the butterscotch sauce, to make your holiday feast easier.

Always use the best ingredients for baking.  We have such great eggs, from Nature's Farm, butter, from Notre Dame Dairies, and flour, from Prairie Flour Mills. There are very few local flour mills in Manitoba.  Try out the flours from Tall Grass Bakery and Prairie Flour Mills!

Fig Mešhnun
Sticky Dried Fig Pudding (Fig Mešhnun)
1/2 pound dried figs, finely chopped
2 cups boiling water
1 1/2 teaspoons baking soda
3 ounces butter (at room temperature) (I used Notre Dame Butter)
9 ounces superfine sugar
3 free-range eggs (I used Nature's Farm eggs, available at the St. Norbert's Farmer's Market)
1 teaspoon ground ginger
9 ounces flour

Butterscotch Sauce
8 ounces butter
7 ounces heavy cream
12 ounces brown sugar
Preheat the oven to 350ºF and butter 12 five-seven ounce metal molds, a 10-inch square cake tin or a 10X8 inch jelly-roll pan.
Put the figs, boiling water, and baking soda into a bowl, then stir well and leave to stand for 20 minutes.
Cream the butter and sugar until light and fluffy.  Add the eggs, one at a time, beating well.  Mix the ginger into the flour, then sift onto the mixture and fold in.  Stir in the fig mixture and pour into the buttered molds.  Bake for 15 minutes.
While the puddings are baking, make the butterscotch sauce.  Combine all the ingredients in a saucepan and bring to the boil, then lower the heat and simmer for 5 minutes.  Stir occasionally, but not too much or it will crystallize.
After 15 minutes baking, spoon a bit of the sauce on top of each pudding and then return to the oven for 5 more minutes, or when a skewer comes out cleanly.
To serve, unmold the puddings onto dessert plates, then invert them so the sticky surface is on top.  Serve with extra sauce.
Enjoy!

Food Safety is local. Get to know your producer on CBC's Weekend Morning Show

Yesterday, on CBC's Weekend Morning Show, with host Laurie Hoogstraten, I featured local beef sausages, in response to a recent report on sausages in Canada not being what is labelled.  This is generally never the case when buying from your local producer, butcher, farmer, etc.

Get to know your local producer!  I featured the beef breakfast and beef smokies of Manitoba Beef, locally produced grass-fed beef.  When you speak to to butcher, or the farmer at the market, you can be guaranteed that you are getting the product that you expect, in fact, they were great!

Local Halal butchers offer the products that you expect as well.

Featured below are beef breakfast sauasages and smokies by Manitoba Beef.  Also featured are Cook's Creek Kimchi, and Nature's Farm eggs.  These products are all available at the St. Norbert's Farmer's Market.

Enjoy!
